Can someone tell me how to highlight part or all of a previous thead in order to make it clear in my post what I am replying to.

Assuming I understand your query correctly, if you are using the web based forum (rather than Tapatalk) the "Quote" button is on the top right of the post you want to quote

You're nearly there, where you have replied to my post you have edited out part of the quote formatting.
Try writing your reply UNDER the quoted text. Once that is mastered you can progress
